In Kagoshima, you can find "Imo-Shochu" which is mainly made from sweet potatoes and water, and "Kokuto(Brown sugar)-Shochu" which is made from Amami-island oriented brown sugar and malted rice. There are 112 breweries for Shochu in Kagoshima! Kagoshima has its original culture "Dare-yame" for enjoying Shochu. "Dare-yame" means to stop ("yame" in Japanese) fatigue ("dare" in Kagoshima dialect"). Through this culture, people in Kagoshima get recovered from their fatigue at work with good sake and appetizers so that they can carry on tomorrow.
